What I particularly like in this book is the history of fat consumption throughout human evolution and the description of the abrupt changes that occurred around 1965 when vegetable oils, margarine and shortening became fashionable and butter and animal fat were declared unhealthy. The book describes the resulting omega-6 to omega-3 essential fatty acid imbalance of the American diet and the consequences for the health of the Americans.
I also appreciate the advice of the author to reduce the intake of omega-6 containing oils while increasing the consumption of food or supplements containing omega-3 EFAs. Indeed an omega-3 EFAs supplementation without a complementary reduction of omega-6 EFAs input is much less efficient since both omega-6 and omega-3 EFAs compete for the same enzymes and the American diet contains a large excess of omega-6 EFAs.
The excess of omega-6 essential fatty acids and the scarcity of omega-3 essential fatty acids are two of the seven deadly sins distorting the American diet into a recipe for disaster.
It is frustrating that 6 years after the publication of this well documented and informative book the sentence printed on page 36 is still applicable: "Until government and industry recognize the importance of eating a balanced ratio of EFAs, you must take matters in your own hands". The book "The Omega Diet" will greatly help you just achieve that .
